Dietitian SPOTLIGHT - Shannon Ebron, MS, RDN, LD
Director of School Nutrition Services - Richmond City Public Schools Richmond, Virginia.
Shannon caught our attention when she shared a TV segment talking about school meals in our School Nutrition group. Shannon was energetic, genuine, enthusiastic and yet professional and so we reached out to her.
Here were some questions we asked:
What is it like to work in School Nutrition?
“A career in school nutrition is like running a business within an educational system. Drawing on the diverse coursework from your dietetics education, encompassing everything from medical nutrition therapy and statistics to food science and business management, you become a multifaceted professional shaping the dietary landscape of schools.”
What do you wish more dietitians knew about working in School Nutrition?
“I wish more dietitians knew that a career in school nutrition has massive potential for direct impact…you have the power to influence the health and well-being of children in a way that is both visible and deeply rewarding…. It’s not just about providing nutritious meals; it’s about fostering a positive relationship between children and their food choices, setting the foundation for a lifetime of well-being.”
