We decided to catch up with Dr. Haub who is still a professor of food, nutrition, dietetics and health at Kansas State University.

Question 1: It's been almost 14 years since you were in the news for your "Twinkie Diet".  How would you describe this diet now? 

Answer: “It may seem odd, but I describe it in the same way.  With experience in media, I am better able to drive points and concepts while addressing questions or the point someone has made about the project.”

Question 2: As a professor at Kansas State, what's your favorite class to teach and why? 

Answer: “…I am not sure there is a favorite class.  However, my enjoyment comes when students get excited about topics and they indicate the discussion, lecture, etc. helped them to better understand that topic.  Most topics in health and lifestyle sciences are contextual and nuanced, students tend to enter these courses with a binary or personal view of the situations.  When the light bulb ignites and they are able to envision the entanglement of issues (education, SES, age, sex, rural/urban, preferences, culture, season, etc.) they begin to understand why “health” (whatever it is in context) is such a challenging aspect of life.”
