We had a great evening at the Build Up Meet Up event during FNCE. It was sponsored by Soy Nutrition Global, the North Carolina Sweetpotato Commission and Build Up Dietitians. A total of 75 people attended and enjoyed free food and drink, got to meet our sponsors and talk about soyfoods and sweetpotatoes, have fun conversations with new and old friends, meet Dave Grotto and hear about his book, collect friendship bracelets & BUD bands and even get temporary tattoos done by our very own moderator Rikki Rabbin. A big thank you to Build Up Admin and Minneapolis resident, Andrew Akhaphong, who help coordinated our volunteers (Maranda and Cassie from Viterbo University and Abby from UMn).

Q#1: What do you currently do as a dietitian?
Answer: “I am a clinical dietitian working in a private healthcare facility, where I focus on critical care (ICU) and surgical cases. In addition to my hospital-based work, I also provide care for outpatients in my consulting rooms. Currently, I am pursuing a PhD in Dietetics, with my research centered on developing a preoperative protocol for patient preoptimization before laparoscopic upper gastrointestinal surgery…I have a deep love for food, and my kitchen is truly my happy place. I enjoy creating content and sharing simple, nutritious recipes with my online followers to show that healthy eating can be easy and quick, without sacrificing flavor or enjoyment.”
Q#2: What’s a favorite typical meal in your country that YOU like to cook?
Answer: “…We have a unique and diverse food culture, influenced by the many different cultures within our country. My favorite South African dish is beef bobotie, a casserole type of dish that has a sweet, curried mince (ground beef), with an egg-based topping. It is traditionally served with yellow rice and is a wonderful warm winter dish

The flooding from Hurricane Helene affected Baxter that supplies many items used in clinical setting.
“IV products that will be rationed include:
Saline: Used to rehydrate patients and replace electrolytes.
Dextrose: A sugar solution used when patients are dehydrated or have low blood sugar. (Saline and dextrose are also used in combination with other drugs that need to administered by IV.)
Dialysis solutions: Used to treat patients with kidney failure.”
